Description

A delicious and fall-inspired healthy muffin recipe that’s full of flavourful and healing spices. Nutritionist approved, wheat-free, and ready in just 30 minutes!

Ingredients

Scale
Nut-Free
  • 1 1/2 cups spelt flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 3 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp cloves
  • 1 apple, finely chopped
  • 1 cup unsweetened apple sauce (see notes)
  • 1/4 cup cold-pressed coconut oil
  • 1/4 cup pure maple syrup
  • 2 eggs
Gluten-Free
  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 3 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp cloves
  • 1 apple, finely chopped
  • 1/2 cup apple sauce (see notes)
  • 1/4 cup cold-pressed coconut oil
  • 1/4 cup pure maple syrup
  • 4 eggs

Instructions

  1. Preheat your oven to 350F and spray a muffin tin with coconut oil.
  2. In a medium bowl, combine dry ingredients.
  3. In a small bowl, combine wet ingredients (including diced apples).
  4. Add wet to dry and mix until well combined.
  5. Divide evenly among muffin tins.
  6. Bake for 20 minutes (25-30 minutes if gluten-free).

Notes

Apple Sauce How-To

If you have a Vitamix, seed and remove pit from 3 apples. Place in your vitamin with the juice from half a lemon and a dash of cinnamon. Slowly increase to 10 until pureed (should take no more than 60-90 seconds). Fresh apple sauce in a minute!

Oil-Free

Replace coconut oil with apple sauce.

Egg-Free

Replace eggs one for one with flax eggs.
