Baked Berry Oatmeal

Description

A warm and sweet oatmeal bursting with berry flavours.

Ingredients

Scale
  • 2 cups large flake, old-fashioned oats
  • 2 cups unsweetened vanilla almond milk
  • 2 cups berries (I used blueberries & raspberries)
  • 2/3 cup plain Greek yogurt
  • 1/2 cup raw honey
  • 1/3 cup raw, unsalted slivered almonds
  • 1 egg
  • 2 Tbsp cinnamon
  • 2 tsp pure vanilla extract
  • 1 1/2 tsp baking powder
  • pinch of sea salt

Instructions

  1. Preheat oven to 400 degrees. Spray a 9 x 9 glass dish with extra-virgin coconut oil. Place all
  2. ingredients in the glass dish and mix well.
  3. Bake for 40 minutes. Let sit for 15 minutes before cutting.

Notes

Make it Vegan

Use coconut yogurt, pure maple syrup, and a flax egg in place of the Greek yogurt, honey, and egg.
