Baked Egg Stuffed Sweet Potato

Ingredients
Scale
- 1 sweet potato
- 2 eggs
- sea salt and pepper, to taste
Optional
- 1 Tbsp pure maple syrup
- 1 Tbsp kale, finely chopped
- 2 grape tomatoes, sliced in half
Instructions
- Preheat your oven to 425F.
- Slice sweet potato in half and drizzle with maple syrup.
- Place on a baking sheet with a silicone mat and bake for 1 hour.
- Remove from oven and turn heat down to 375F.
- Use a fork to mash the sweet potato, making a groove for the egg in the centre.
- Crack an egg in each half.
- Top with sliced tomatoes, chopped kale, and a sprinkle of sea salt and pepper.
- Bake for 14-16 minutes.
