Banana + Almond Butter Oatmeal
Description
This creamy, flavourful oatmeal comes together in just 10 minutes. It’s a great source of protein, fibre, and many vitamins and minerals to help kickstart your day. You’ll be surprised at how filling and satisfying this simple breakfast is!
Ingredients
- 1 banana
- 2 cups unsweetened oat milk
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon ground cinnamon
- 1 to 1 1/2 cups of large flake oats
- 2 tablespoons almond butter
Instructions
- In a medium-size pot, mash the banana.
- Add the milk, vanilla, and cinnamon. Whisk until combined.
- Cover and turn on high.
- Once it begins to boil, add the oats and stir. Cover and turn down to a simmer.
- Cook 5 minutes, or until oats are cooked and have soaked up most of the liquid.
- Divide among 4 bowls and top with 1/2 tablespoon of almond butter. Stir to combine. Serve warm.
Notes
Ingredient Tip:
If you don’t like bananas, skip them and add a little maple syrup to the liquid to sweeten instead.
Variation Tip:
Go nut-free by omitting the almond butter or using a seed butter instead.
Serving Tip:
Top with your favourite goodies like fresh or frozen fruit (a great way to cool it off for kids), dried fruit, trail mix, or nuts and seeds.
