One-Pot Breakfast Hash

Description

A simple one-pot breakfast for weekends, holidays, and Christmas morning. Cozy up with this hot, savory breakfast that will fuel you all season long.


Ingredients

Scale
  • 2 tablespoons avocado olive oil
  • 1 large yam, cut into 1/2-inch cubes
  • 8 Brussels sprouts, trimmed and quartered
  • 1 red pepper, finely chopped
  • 4 eggs
  • Pinch sea salt
  • Freshly ground black pepper
  • 1/4 cup finely chopped green onion, greens only

Instructions

  1. Preheat your oven to 350F.
  2. Preheat an oven-safe skillet or Dutch oven on medium to medium-high heat.
  3. Add the oil, yams, and Brussels sprouts. Let cook for a couple of minutes, until yams get a little crispy, before stirring or tossing.
  4. Toss or stir periodically until the yams and brussels sprouts become crispy, approximately 6 to 8 minutes.
  5. Stir in the red peppers and add salt and pepper to taste.
  6. Top with the eggs and bake in the oven for 12 minutes, or until egg whites are cooked but yolk is still soft.
  7. Top with green onions and serve.

Notes

Variation Tip

  • Top with sliced avocado, crispy bacon bits, or a touch of hot sauce.

Time-Saving Tip

  • Save time by prepping the ingredients the night before. You can also save time by preparing the yams, Brussels sprouts, and red peppers the night before. The morning of you can simply top with the eggs and bake!
