Description

Is there ever a bad time to have tacos? These quick and easy breakfast tacos will definitely start your day off right. They are high in protein and healthy fats to help curb cravings all day. But they’re also full of mouth-watering flavours. Be careful though – they’re addictive!


Ingredients

Scale
  • 8 eggs
  • Sea salt and freshly ground black pepper, to taste
  • 4 tortilla shells
  • 1/4 cup finely chopped green onion
  • 1/4 cup finely chopped cilantro
  • 1 avocado, thinly sliced
  • Fresh salsa
  • 1 lime, cut into quarters

Instructions

To Make the Scrambled Eggs

  1. Heat a medium-size pan on medium heat. Add the eggs and stir until combined.
  2. Cook for 4-5 minutes, or until cooked through. Stirring throughout. Add salt and pepper to taste.

To Assemble the Tacos

  1. Divide the eggs among 4 tortilla shells.
  2. Top with green onion, cilantro, avocado, salsa, and a squeeze of lime. 

Notes

Make it Vegan

Omit the eggs and use beans or tofu scramble instead.

Variation Tip

These are so versatile, depending on your preferences and how much time you want to spend. You can add mashed beans, red onion, garlic, fresh tomato and cucumber. Whatever you heart desires! Play around with them as much as you’d like.
