It tastes just like a traditional Caesar salad … even the pickiest eaters will fall in love!
Ingredients

Salad
- 2 boneless, skinless chicken breast
- 8 cups kale, washed and cut into strips
- 4 Tbsp unsalted, dry-roasted pumpkin seeds
Caesar Dressing
- 1/4 cup extra virgin olive oil
- 1/4 cup grated parmesan cheese
- 2 Tbsp white wine vinegar
- 2 Tbsp dijon mustard
- 1 Tbsp freshly squeezed lemon juice
- 2 garlic cloves, crushed
Instructions
- Preheat your pan on medium-high heat. Add a little olive oil and your chicken breasts.
- Cook for 7-8 minutes, flip and cook another 7-8 minutes or until cooked through.
- While the chicken is cooking, make caesar dressing.
- Pour dressing over kale and massage dressing, by hand, into kale.
- Mix in the pumpkin seeds.
- Once chicken is cooked, cut into thin strips and add to your salad. Can be served warm or cold.
