Carrot Zucchini Breakfast Cookies

Description
A cookie that’s totally acceptable to have for breakfast.
Ingredients
Scale
- 1 banana, mashed
- 2 eggs
- 1 cup old-fashioned oats
- 1 cup carrots, grated
- 1 cup zucchini, grated
- 1 Tbsp ground cinnamon
- 1/2 tsp ground nutmeg
- pinch of ginger
- liquid stevia, to taste (optional)
Instructions
- Preheat your oven to 375F.
- Combine all of the ingredients together in a bowl.
- Spray a cookie sheet with extra virgin coconut oil. Scoop mixture into 8 large cookies.
- Bake for 10-15 minutes and let cool.
Notes
Make into half size cookies to use as a snack or pre- or post-workout snack.
Make it Vegan
Replace the eggs with flax eggs one for one.
