Cauliflower Tacos

Description
Whether it’s for meatless Monday, better digestion, or just because you feel like a more plant-based meal – these cauliflower tacos are to die for! They’re quick to make, loaded with fibre, and my kids say they taste just like the real thing.
Ingredients
- 1/2 head of cauliflower
- 1 cup unsalted, raw walnuts
- Juice from 1 lime
- Taco seasoning (double the recipe, or more depending on size of cauliflower)
- Tortilla or taco shells (I used small organic corn tortillas)
- Optional toppings: avocado, cilantro, salsa, cabbage
Instructions
- In a food processor, pulse together the cauliflower, walnuts, lime juice, and taco seasoning.
- Cook the cauliflower mixture in a skillet on medium heat for 3-5 minutes, or until heated.
- Meanwhile, prepare your toppings of choice.
- Add the mixture to your tortilla or taco shells and top with your favourite toppings.
Notes
Storage Tip
This mixture keeps great for 5 days if stored in an airtight container in the refrigerator. It also freezes well.
Variation Tip
Any toppings will do! Cucumber, tomatoes, peppers, corn, avocado, cilantro, cabbage, and salsa.
Ingredient Tip
Use quinoa instead of cauliflower. Simply make the quinoa according to the package, add the lime juice and taco seasoning. Serve in a tortilla or taco shell with your favourite toppings.
