Maple Cinnamon Chickpea Ice Cream

Description

A high protein dessert that’s just the right amount of sweet with a hint of cinnamon for a balanced flavour that leaves you wanting more.


Ingredients

Scale

Chickpea Ice Cream

  • 1 Cup Chickpeas (canned or dried and soaked 12 hours)
  • 3 Bananas (frozen)
  • 2 Tbsp Pure Maple Syrup
  • 1 tsp Cinnamon

Maple Cinnamon Roasted Chickpeas (Optional)

  • 1/2 Cup Chickpeas (canned or dried and soaked 12 hours)
  • 1 Tbsp Organic Avocado Oil
  • 1 Tbsp Pure Maple Syrup
  • 1 tsp Cinnamon
  • 1/2 tsp Arrowroot Powder

Instructions

Maple Cinnamon Chickpea Ice Cream

  1. Place all the ingredients in your blender. Blend until your desired consistency.
  2. Freeze for 30 minutes if needed.
  3. Optional: Top with Maple Cinnamon Roasted Chickpeas!

Maple Cinnamon Roasted Chickpeas

  1. Preheat your oven to 400F and line a baking sheet with parchment paper.
  2. Remove the skins from the chickpeas, rinse, and dry well.
  3. In a small bowl, gently mix the chickpeas with the oil, maple syrup, cinnamon, and arrowroot powder until evenly coated.
  4. Spread them out on the baking sheet, making sure they aren’t touching.
  5. Bake for 10 minutes, stir and spread out evenly and bake for another 10 minutes.
  6. Let cool completely before serving.
