Ingredients
Scale
- 1/2 cup extra virgin coconut oil, melted
- 1/2 cup raw honey
- 1/4 cup unsweetened apple sauce
- 2 eggs
- 1 tsp pure peppermint extract (or any of your favourites!
- 1/2 cup coconut, spelt, or whole grain flour
- 1/3 cup unsweetened cocao powder – not cocoa!
- 1/2 tsp baking powder
- 1/2 tsp stevia, optional, if you want it sweeter
- 1/3 cup dark chocolate chips (70% cocao or more)
Instructions
- Preheat your oven to 350F.
- In a large bowl combine the wet ingredients. In a small bowl mix together the dry ingredients.
- Slowly add the dry ingredients to the wet ingrednets and mix well – do not over mix!
- Lightly grease a 9×9 pan and pour the batter inside.
- Bake for 25 minutes.
- Let cool before serving!
Notes
Freezer Friendly
- Once the brownies have cooled, cut into 12 slices and wrap individually and place in the freezer. Pull out of the freezer a couple of hours before needed so they can thaw.
Make it Vegan
Swap honey for pure maple syrup. Use flax eggs and vegan chocolate.
