Maple Pecan Cinnamon Rolls

Description

Not your average cinnamon roll … but, this healthy version is the next best thing! Full of maple sweetness and pecan crunch – you’ll have a hard time stopping at one!

Ingredients

Scale
For the dough (see below for a more traditional dough):
  • 3 cups almond flour
  • 1/4 cup unsweetened almond milk
  • 2 Tbsp pure maple syrup
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 1 egg
For the filling:
  • 1/2 cup pecans
  • 1/4 cup pure maple syrup
  • 1–2 Tbsp ground cinnamon
For the icing:
  • 1/2 cup arrowroot powder
  • 1 tsp powdered stevia
  • 3 Tbsp unsweetened almond milk (or more for thinning)

Instructions

  1. Combine the ingredients for the dough.
  2. Cover and place in the freezer for 10 minutes.
  3. In a food processor, place the filling ingredients and pulse until pecans are chopped.
  4. On a silicone mat, roll out the dough until thin. Spread filling evenly over dough. Roll into a log and place back in the freezer for 10 minutes.
  5. Preheat the oven to 350F.
  6. Cut into 6 slices, place in a pie plate and bake for 20 minutes.
  7. Remove from oven and let cool slightly.
  8. Combine the ingredients for the icing and drizzle over cinnamon rolls.

Notes

Spelt Dough
  1. Prefer a more traditional dough? Make a half batch of my Simple Homemade Bread (sub the honey for maple syrup!) and double the filling and glaze.
  2. Roll out, spread the filling, and roll into a log. Slice into 12 rolls.
  3. Place cinnamon rolls in a glass dish (so they’re touching) and bake for 30-35 minutes.

Make it Vegan

Use a flax egg.
