Citrus Pepper Salmon Salad

A simple recipe to beat cravings (and a great post-workout meal too!).
Ingredients

- 3oz salmon fillet
- 8 unsweetened dried cherries
- 2 cups spinach
- 1 lemon
- Sea salt and pepper, to taste
Instructions
- Heat a small pan on medium heat and spray with extra-virgin olive oil.
- Place salmon skin side down on pan.Squeeze 1/4 lemon juice and a little sea salt over salmon and coat with ground pepper. After 3 minutes flip salmon.
- Peel off skin and squeeze 1/4 lemon juice, a little sea salt and coat
- with pepper. After 3 minutes flip again and cook for 1-2 more minutes, or until salmon is cooked through.
- Meanwhile, halve or quarter your dried cherries. Mix spinach and cherries and squeeze 1/2 lemon juice on top. Place salmon on top to serve.
