Cucumber Sliders

Description

A simple and nutritious appetizer or snack.


Ingredients

Scale
  • 3 Large cucumbers
  • Toppings –
  • Hummus
  • Red pepper
  • Greek yogurt
  • Fresh mint leaves
  • Guacamole
  • Grape tomatoes

Instructions

  1. Wash and slice your cucumbers into 1/2 inch rounds.
  2. Use a small spoon to scoop out the seeds, leaving some cucumber at the bottom (don’t go all the way through!).
  3. Use a towel to dab out any excess water.
  4. Fill the cucumber with a little bit of your favourite topping (see combinations in notes).
  5. Refrigerate until serving.

Notes

Topping Combinations

  1. Red pepper hummus with a small piece of red pepper on top.
  2. Greek yogurt with diced, fresh mint leaves.
  3. Guacamole with a quarter grape tomato.

Make it Vegan

Use coconut yogurt.
