A dairy-free, egg-free eggnog alternative!
Ingredients

- 3 cups cashews, soaked (see note below)
- 2 1/2 cups filtered water
- 1/4 cup pure maple syrup
- 1 Tbsp blackstrap molasses
- 2 tsp pure vanilla extract
- 3 tsp cinnamon
- 1 1/2 tsp nutmeg
Instructions
- Place all the ingredients into your blender. Blend on high until smooth.
Notes
How-To Soak Cashews
- Place your cashews in a bowl.
- Fill with water until cashews are covered.
- Cover the bowl and let sit 8-12 hours.
- Drain water and rinse cashews.
Making it Silky Smooth
- If you prefer a smoother consistency, you can use a reusable nut bag (or cheesecloth) to strain out the pulp for a silky smooth texture. It takes an extra 10 minutes, but is worth the results in my opinion!
