- 12 eggs
- 1/2 cup unsweetened almond milk
- 1 cup spinach
- 1 tomato, thinly sliced
- 1/2 zucchini, thinly sliced
- ground pepper, to taste
Instructions
- Preheat your oven to 375F and spray a pie dish with extra virgin coconut oil.
- Whisk eggs, almond milk and spinach together and poor in the pie dish.
- Top with tomato and zucchini and sprinkle with pepper.
- Place in the oven and bake for 40-45 minutes.
