Deep with molasses and spiced just perfectly … it’s Christmas in a cookie.
Ingredients

- 2 Tbsp cold-pressed, extra virgin coconut oil
- 1/4 cup organic coconut sugar
- 3 Tbsp blackstrap molasses
- 1 egg
- 1 cup whole-grain flour
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 1 tsp baking powder
- ¼ tsp cloves
Instructions
- Preheat your oven to 325F and spray a cookie sheet with coconut oil.
- Blend oil, sugar, molasses and egg together in a medium bowl.
- In a small bowl mix flour, cinnamon, ginger, cloves and baking powder. Add to wet ingredients and mix.
- Roll into 12 balls and roll in a little extra coconut sugar (optional).
- Place on cookie sheet and bake at for 18 min, or until edges begin to brown.
Notes
Make it Vegan
Use a flax egg in place of the egg.
