Description

Crispy on the outside but soft and chewy on the inside … these gingerbread men are perfect. Created by my youngest son, they’re full of all the gingerbread flavours you love, but with good-for-you ingredients. You’ll be loving these all Christmas long!


Ingredients

Scale
  • 1 1/2 cup whole-grain spelt flour
  • 1/4 cup coconut sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon cloves
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon sea salt
  • 1/4 cup coconut oil, melted
  • 1/4 cup blackstrap molasses
  • 1 egg

Instructions

  1. In a medium bowl, whisk together the dry ingredients.
  2. In a large bowl, whisk together the wet ingredients.
  3. Fold the dry ingredients into the wet until completely combined. The dough will be a little sticky, don’t worry!
  4. Cover with bowl and place in the fridge for 1 hour.
  5. Preheat your oven to 350F.
  6. Flour your surface and roll out the dough until 1/4″ thick.
  7. Cut into your favourite shapes and place on a silicone-lined cookie sheet.
  8. Bake 10-12 minutes. Let cool 10 minutes before moving to the cooling rack.
  9. Let cool completely before glazing or icing (if you choose to do so!).
