Matteo’s Gingerbread Men

Description
Crispy on the outside but soft and chewy on the inside … these gingerbread men are perfect. Created by my youngest son, they’re full of all the gingerbread flavours you love, but with good-for-you ingredients. You’ll be loving these all Christmas long!
Ingredients

- 1 1/2 cup whole-grain spelt flour
- 1/4 cup coconut sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon cloves
- 1/4 teaspoon nutmeg
- 1/4 teaspoon sea salt
- 1/4 cup coconut oil, melted
- 1/4 cup blackstrap molasses
- 1 egg
Instructions
- In a medium bowl, whisk together the dry ingredients.
- In a large bowl, whisk together the wet ingredients.
- Fold the dry ingredients into the wet until completely combined. The dough will be a little sticky, don’t worry!
- Cover with bowl and place in the fridge for 1 hour.
- Preheat your oven to 350F.
- Flour your surface and roll out the dough until 1/4″ thick.
- Cut into your favourite shapes and place on a silicone-lined cookie sheet.
- Bake 10-12 minutes. Let cool 10 minutes before moving to the cooling rack.
- Let cool completely before glazing or icing (if you choose to do so!).
