Ingredients

For the cookies:
- 1/4 cup organic grass-fed butter
- 1/4 cup cold-pressed, extra virgin coconut oil
- ½ tsp pure vanilla extract
- 1 cup whole-grain spelt flour
- ¼ cup organic coconut sugar
- ½ tsp baking powder
- ¼ tsp salt
- 1 egg
For the icing:
- 1/2 cup arrowroot powder
- 1 tsp powdered stevia
- 3 Tbsp light coconut milk
Instructions
- In a medium bowl, cream butter, oil and vanilla. Add in flour, baking powder, salt and coconut sugar. Add in the egg and mix until combined.
- Roll into a ball and place in a ziplock bag and freeze for 15-20 minutes.
- Preheat oven to 325F. Roll dough out with a roller, until ¼” thick and cut into shapes.
- Bake for 10-15 min. Mix icing together & let cookies cool before icing.

Store in the fridge in an airtight container.
