A simple dish bursting with flavour and totally appropriate for any meal of the day.
Ingredients

- 12 eggs
- 1 roasted sweet potato, mashed
- 2 cups kale, stems removed and chopped into bite-size pieces
- 1 cups cherry tomatoes, halved
- 1–2 sprigs fresh rosemary, removed from stem
- pepper, to taste
Instructions
- Preheat the oven to 375F and spray an oven-safe dish with cold-pressed extra virgin olive oil.
- In the dish – beat the eggs, add the sweet potato and mix well. Add the rest of the ingredients, folding gently until coated with egg mixture.
- Bake for 40 minutes or until egg is cooked through.
