Description

Refreshing and super simple – this modern take on a smoothie is an addictive Summer breakfast. As long as you’ve got frozen produce, you can whip up this delicious meal in no time at all.


Ingredients

Scale
  • ½ can organic coconut milk
  • 2 lemons, juice and zest
  • ½ cup frozen cauliflower
  • 1 frozen banana

Instructions

  1. In a high-speed blender, combine your coconut milk, lemon juice and zest, cauliflower, and banana.
  2. Blend for 30-60 seconds, or until it turns into a soft-serve consistency. Don’t overmix!
  3. Top with your favourite goodies (see serving tip below) and serve immediately.

Notes

Instructions Tip

If you have a Vitamix, use the frozen dessert setting.

Serving Tip

These flavours go well topped with unsweetened shredded coconut, lemon or lime zest, chia seeds, poppy seeds, or pistachios.

Ingredient Tip

If the banana flavour is too strong, use half a banana and 1 cup of cauliflower. Increase coconut milk as needed for consistency.
