- 4 russet potatoes
- toppings: (optional)
- greek yogurt, non-fat and plain
- salsa
- turkey bacon, diced
- carrots, shredded
- green onion, diced
- black beans, drained and rinsed
- chicken, slow-cooked and shredded
- avocado, diced
- yellow peppers, diced
- brussels sprouts, shredded
- tomatoes, diced
- onions, thinly sliced and cooked
Instructions
- Preheat your oven to 425F.
- Wash your potatoes and slice them in half, lengthwise. Place them on a cookie sheet and bake for 30 minutes, or until soft.
- Add toppings of choice and serve. Add a side salad for an extra boost of nutrients.
