Ingredients

- 4 cups arugula
- 1 mango, chopped
- 1 yellow pepper, coarsely chopped
- 1 tomato, coarsely chopped
- 1/2 red onion, thinly sliced
- 1/2–1 cup fresh basil, finely diced and divided
- 1 cup cooked quinoa
- 1/4–1/2 cup goat cheese, crumbled
- 1 avocado
- 2 limes
- Pinch of sea salt
Instructions
- In a large bowl, combine the arugula, mango, peppers, tomatoes, onion, half of the basil, quinoa, and goat cheese.
- In a high-speed blender combine the lime juice, avocado, the remaining basil, and sea salt. Blend on high for 10-15 seconds, or until smooth.
- Pour the dressing over the salad and gently mix to combine.
Notes
Dairy-Free Variation
Omit the goat-cheese to make it dairy-free.
