Ingredients

- 2 cups whole-grain spelt flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 2 mangos, peeled and pit removed
- 2 limes, zest and juice
- 1/4 cup raw honey
- 1/4 cup extra virgin coconut oil
- 1 egg
Instructions
- Preheat your oven to 350F and spray a muffin tin with coconut oil.
- In a medium bowl, combine flour, baking soda, and baking powder.
- In a food processor or blender, combine one mango, juice and zest from limes, honey, oil, and eggs.
- Add wet ingredients to dry ingredients.
- Chop second mango into small pieces and fold into batter.
- Divide into 12 muffin cups and bake for 25 minutes.
Notes
Make it vegan
Swap the honey for pure maple syrup and use a flax egg.
