An easy one dish week night dinner to make your busy life simpler!
Ingredients

- 1 cup brown rice
- 2 cup water
- Juice from 1 lemon
- 2 cup spinach
- 2 chicken breasts, cut into strips
- 1 small onion, thinly sliced
- 2 peppers, thinly sliced
Seasoning
- 3 tsp chili powder
- 2 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp paprika
- 1/4 tsp sea salt
Instructions
- Preheat your oven to 425F.
- In a large corning ware, add rice and pour water over top. Add juice from the lemon and top with spinach, chicken, peppers, onions and seasoning. Stir to coat.
- Bake for 45 minutes or until chicken and rice are cooked through.
