Description

An easy one dish week night dinner to make your busy life simpler!


Ingredients

Scale
  • 1 cup brown rice
  • 2 cup water
  • Juice from 1 lemon
  • 2 cup spinach
  • 2 chicken breasts, cut into strips
  • 1 small onion, thinly sliced
  • 2 peppers, thinly sliced

Seasoning

  • 3 tsp chili powder
  • 2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp paprika
  • 1/4 tsp sea salt

Instructions

  1. Preheat your oven to 425F.
  2. In a large corning ware, add rice and pour water over top. Add juice from the lemon and top with spinach, chicken, peppers, onions and seasoning. Stir to coat.
  3. Bake for 45 minutes or until chicken and rice are cooked through.
