Pesto Avocado Toast

Description

It’s time to up your avocado toast game with this twist on a classic. The bold flavours of pesto mix perfectly with the rich creaminess of avocado. Make the pesto ahead and you have a quick and simple breakfast, lunch, or snack.


Ingredients

Scale

For the Pesto (makes 1 cup)

  • Juice of 1 lemon
  • 1/2 cup extra virgin olive oil
  • 1/2 cup nutritional yeast (or parmesan cheese)
  • 1/2 cup raw, unsalted cashews
  • 2 garlic cloves, peeled
  • 1 1/4 cup fresh basil
  • Pinch of sea salt

For the Avocado Toast

  • 4 pieces of sprouted grain bread
  • 2 avocados
  • 2 tablespoons lime juice
  • Pinch sea salt
  • Freshly ground pepper, to taste

Instructions

To make the Pesto

  1. In a food processor, combine the lemon juice, oil, nutritional yeast, cashews, garlic, basil, and sea salt. Blend for 1 minutes, or until you’ve reached a somewhat smooth consistency. Add more oil if needed.

To make the Avocado Toast

  1. Toast your bread.
  2. Mash the avocado in a small bowl. Mix in the lime juice, salt, and pepper. Mix well.
  3. When the toast is ready, spread a thin layer of pesto and top with 1/4 of the avocado mixture.

Notes

Prep Tip

Make the pesto ahead for a quick breakfast. Even better, double the batch as it keeps well in the fridge.

Time-Saving Tip

Use store-bought pesto.

Serving Tip

Add some leafy greens or top with thinly sliced tomato, cucumber, or sprouts.
