It’s time to up your avocado toast game with this twist on a classic. The bold flavours of pesto mix perfectly with the rich creaminess of avocado. Make the pesto ahead and you have a quick and simple breakfast, lunch, or snack.

For the Pesto (makes 1 cup)
- Juice of 1 lemon
- 1/2 cup extra virgin olive oil
- 1/2 cup nutritional yeast (or parmesan cheese)
- 1/2 cup raw, unsalted cashews
- 2 garlic cloves, peeled
- 1 1/4 cup fresh basil
- Pinch of sea salt
For the Avocado Toast
- 4 pieces of sprouted grain bread
- 2 avocados
- 2 tablespoons lime juice
- Pinch sea salt
- Freshly ground pepper, to taste
Instructions
To make the Pesto
- In a food processor, combine the lemon juice, oil, nutritional yeast, cashews, garlic, basil, and sea salt. Blend for 1 minutes, or until you’ve reached a somewhat smooth consistency. Add more oil if needed.
To make the Avocado Toast
- Toast your bread.
- Mash the avocado in a small bowl. Mix in the lime juice, salt, and pepper. Mix well.
- When the toast is ready, spread a thin layer of pesto and top with 1/4 of the avocado mixture.
Notes
Prep Tip
Make the pesto ahead for a quick breakfast. Even better, double the batch as it keeps well in the fridge.
Time-Saving Tip
Use store-bought pesto.
Serving Tip
Add some leafy greens or top with thinly sliced tomato, cucumber, or sprouts.
