Ingredients

- 1 cup cooked quinoa
- 1 egg
- 1 cup onions, finely chopped
- 1/2 cup spinach, finely chopped
- 1/4–1/2 cup cheese, grated
- 2 garlic cloves
- 1 tsp oregano
- 1/2 tsp basil
- pepper, to taste
- 1/4 cup marinara sauce, per person
Instructions
- Preheat oven to 350F and spray 12 cup muffin tin with extra virgin olive oil.
- Combine all of the ingredients in a large bowl.
- Divide mixture among muffin tins.
- Bake for 20 minutes.
- Serve with a side of marinara sauce to dip.
