Ingredients

- 4 portobello mushrooms
- 4 cups of vegetables, chopped
- 1/2 cup organic, low-sodium tomato paste
- 1/2 cup cheese of choice (nutritional yeast,
- daiya, etc)
- 1 Tbsp dried oregano
Instructions
- Preheat your oven to 375F.
- Cut the stem off the portobello mushrooms and place on a cookie sheet.
- Spread 2 Tbsp of tomato paste on each mushroom and sprinkle with 1/4 Tbsp of oregano.
- Top each with 1 cup of vegetables and 2 Tbsp of cheese.
- Bake for 5-8 minutes or until cheese is melted.
