Pumpkin Spice Baked Oatmeal

Description

Pumpkin is a classic fall addition to, well … everything. This recipe takes your breakfast to a whole new level with your favourite pumpkin flavors in a warm and comforting meal.

Ingredients

Scale
  • 1 cup pure pumpkin puree
  • 1 cup oat milk
  • 1 (400 mL) can coconut milk
  • 1 tablespoon pumpkin pie spice
  • ¼ cup pure maple syrup
  • ¼ cup chia seeds
  • ½ tablespoon pure vanilla extract
  • Pinch sea salt
  • 2½ cups old-fashioned oats

Instructions

  1. Preheat the oven to 375F.
  2. In a greased 9 x 13 glass baking dish, whisk together the pumpkin, oat milk, coconut milk, spice, syrup, chia seeds, vanilla, and sea salt.
  3. Stir in the oats.
  4. Bake for 30 minutes.
  5. Serve warm and garnish with some crushed walnuts, Greek yogurt, or fruit.
