Ingredients

- 2 cups whole grain spelt flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1 1/2 Tbsp pumpkin pie spice
- pinch sea salt
- 2 eggs
- 1/2 cup pure maple syrup
- 1 tsp pure vanilla extract
- 1 cup pumpkin puree
- 1/2 cup dark chocolate chips (or a little more!)
Instructions
- Preheat your oven to 350F.
- In a large bowl, combine dry ingredients. In a smaller bowl, mix wet ingredients. Add the wet ingredients to the dry ingredients and mix well.
- Line a cookie sheet with parchment paper and scoop dough onto cookie sheet. Use a spoon to flatten the cookie slightly.
- Bake for 15 minutes.
Notes
Make it Vegan
Use flax eggs in place of regular eggs, one for one. Use pure maple syrup instead of honey and vegan chocolate chips.
