Raw Berry Mint Pie
Description
This is the ultimate Summer dessert. It’s light and refreshing with hints of lime and mint. But it’s also raw, so no baking required. You’ll be enjoy this dessert all season long!
Ingredients
For the Crust
- 2 cups raw pecans
- 1/4 cup coconut sugar
- 2 tablespoons coconut oil
- 1/2 tsp sea salt
For the Filling
- 2 cups raspberries
- 2 cups blueberries
- 2 tablespoon fresh mint, minced
- 2 teaspoon pure vanilla extract
- Juice from 1 lime
- Pinch sea salt
Instructions
To Make the Crust
- Use the “s” blade in your food processor and pulse together the pecans and sugar until crumbly.
- Add the oil and sea salt. Pulse until it begins to stick together. Add more coconut oil if needed.
- Press firmly into a pie plate.
To Make the Filling
- In a large bowl, combine the raspberries, blueberries, mint, vanilla, lime, and sea salt. Mix gently to combine.
- Pour into the crust.
- Refrigerate for 20 minutes or until firm.
Notes
Ingredient Tip
While you can use any combination of berries that you love, you may need to add in some extra coconut oil to hold the crust together with heavier berries (like blackberries). Alternatively, you can double the crust so it can hold the weight better.
Serving Tip
Serve with a spoonful of coconut whip, a sprinkle of fresh mint, and a dusting of cacao.
