Red Peppers + Guacamole

Description

Simple, nutritious, and always a crowd-pleaser.


Ingredients

Scale
  • 4 Red peppers
  • 2 Avocados, halved and pit removed
  • 1 jalapeno pepper, seeded
  • Juice from half a lime
  • 1/4 cup red onion
  • 1/4 cup cilantro
  • Sea salt and pepper

Instructions

  1. Slice the red peppers and place on your serving platter.
  2. In a food processor, combine the avocado, jalapeno, lime juice, red onion, cilantro, salt, and pepper. Pulse until combined.
  3. Scoop into a serving bowl and place on platter with red peppers to serve.

Notes

Time-Saver Tip

Use whatever vegetables you have on hand (they all go great with guacamole) and buy a fresh, organic pre-made guacamole (like Wholly Guacamole).
