Tart Rhubarb Crisp

Description

The taste of summer in a deliciously warm treat.

Ingredients

Scale
  • 2 stalks of rhubarb
  • small pinch of stevia, optional
  • 2 Tbsp raw honey
  • 1–2 cups water (enough to cover rhubarb)
  • 1/2 cup old-fashioned oats
  • 1/2 Tbsp cinnamon

Instructions

  1. Wash and cut the stems of the rhubarb and chop into small pieces, about 2 cm in width.
  2. Place rhubarb, stevia (optional) and water in a small pot and heat on medium heat for approximately 10 minutes, or until the rhubarb is soft.
  3. While the rhubarb is cooking, preheat your oven to 375F.
  4. Combine oats, cinnamon and 1 Tbsp honey into a thick paste and set aside.
  5. Grease a small corningware or glass dish.
  6. Once the rhubarb is soft, strain out the liquid.
  7. Place rhubarb in a corningware and mix in the last Tbsp of honey. Top with the oat topping.
  8. Place in the oven and bake for 15 minutes.

Notes

Make it Vegan

Replace the honey with pure maple syrup.
