Tart Rhubarb Crisp

The taste of summer in a deliciously warm treat.
Ingredients
Scale
- 2 stalks of rhubarb
- small pinch of stevia, optional
- 2 Tbsp raw honey
- 1–2 cups water (enough to cover rhubarb)
- 1/2 cup old-fashioned oats
- 1/2 Tbsp cinnamon
Instructions
- Wash and cut the stems of the rhubarb and chop into small pieces, about 2 cm in width.
- Place rhubarb, stevia (optional) and water in a small pot and heat on medium heat for approximately 10 minutes, or until the rhubarb is soft.
- While the rhubarb is cooking, preheat your oven to 375F.
- Combine oats, cinnamon and 1 Tbsp honey into a thick paste and set aside.
- Grease a small corningware or glass dish.
- Once the rhubarb is soft, strain out the liquid.
- Place rhubarb in a corningware and mix in the last Tbsp of honey. Top with the oat topping.
- Place in the oven and bake for 15 minutes.
Notes
Make it Vegan
Replace the honey with pure maple syrup.
