A simple and versatile DIY meal the whole family will love.
Ingredients

Salad
- 4 eggs, hard or soft boiled
- 1 cup chickpeas, drained and rinsed
- 4 Tbsp fresh herbs, diced
- 8 cups veggies, chopped (carrots, purple cabbage, mushrooms, avocado, peppers, cucumbers)
- 4–8 cups spinach, kale or other leafy greens
Hummus Dressing
- 1/4 cup hummus
- 2 Tbsp extra virgin olive oil
- juice from 1/2 lemon
Instructions
- Place all veggies and proteins on the table in separate bowls.
- Combine the dressing and place on the table.
- Use the spinach as a base and top with whatever veggies and protein you want. Drizzle with some hummus dressing.
Notes
Make it Vegan
Omit the eggs or replace them with black beans.
