Sweet Potato Shepherd’s Pie

Description

A twist on a classic, this shepherd’s pie uses sweet potato, ginger, and cardamom to give you the warmth and tastes of Christmas that you love.


Ingredients

Scale
  • 1 large sweet potato, peeled and cut into large chunks
  • 2 small russet potatoes, peeled and cut into large chunks
  • 1 tablespoon avocado oil
  • 1/2 sweet onion, finely chopped
  • 4 garlic cloves, coarsely chopped
  • 1-inch piece ginger, peeled and coarsely chopped
  • 2 carrots, peeled and coarsely chopped
  • 2 celery stalks, coarsely chopped
  • 1 lb organic, grass-fed ground beef
  • 2 tablespoons tomato paste
  • 1/2 tablespoon dried parsley
  • 1/4 tablespoon chili powder
  • 1/4 teaspoon ground cardamom
  • 1/2 cup frozen peas
  • Freshly ground black pepper, to taste
  • Pinch sea salt, to taste

Instructions

  1. Preheat the oven to 425F.
  2. In a medium-size pot, cover the sweet potato and russet potatoes with water. Cover with a lid and let boil on medium-high heat for 10 minutes, or until potatoes are soft and easily pierced with a fork.
  3. In a medium sautee pan, cook the beef for 10 minutes, stirring frequently, or until cooked through.
  4. Meanwhile, in a large sautee pan, heat the avocado oil on medium heat. Add the onion and a pinch of salt. Cook for 2-3 minutes or until onions become translucent and fragrant.
  5. Add the garlic, ginger, carrots, and celery to the onion. Cook another 2-3 minutes. Gently mix in the peas. Set aside.
  6. When the beef is cooked, Add the tomato paste, parsley, chili powder, and cardamom. Mix well and set aside.
  7. When the potatoes are ready, drain the water and use a potato masher to mash until smooth. Set aside.
  8. In a large oven-safe dish, layer the beef, vegetable mixture, and top with the potatoes. Spreading carefully to cover the surface. Top with some freshly ground black pepper.
  9. Place in the oven and cook for 30 minutes, or until heated through.

Notes

Time-Saver Tip

  • Don’t let the amount of ingredients fool you – this recipe is actually quite easy to put together. You can save time by using a food processor or hand chopper for the onions, garlic, carrots, and celery. Or, you can use bagged frozen vegetables and pre-minced onion, garlic, and ginger.
