A tangy and creamy chicken salad with the perfect pop of sweetness.
Ingredients

- 2 boneless, skinless chicken breasts
- 1 cup green grapes, halved
- 1/3 cup plain, non-fat Greek yogurt
- 3 Tbsp dijon mustard
- 1 Tbsp dried tarragon
- 4 cups spinach
Instructions
- Grill, bake or poach the chicken breasts and chill.
- Meanwhile, combine the yogurt, mustard and tarragon leaves.
- Cut the chicken into bite-size pieces and mix with the sauce. Gently fold in grapes.
- Top spinach with chicken salad.
