Tequila Lime Tacos
Description
A deliciously light summer meal that the whole family will love!
Ingredients

Filling
- 2 boneless, skinless chicken breasts
- 1/4 cup lime or regular tequila
- juice from 2 limes
- 2 cloves of garlic, crushed
- 1/2 tsp chili powder
- 4 whole grain tortilla shells
Toppings
- Greek yogurt
- Salsa
- Sliced mango
- Sliced avocado
- Diced red pepper
- Jalapenos
Instructions
- Combine tequila, lime juice, garlic and chili powder.
- Place chicken in a ziplock bag, cover with tequila mixture, close the bag and shake well.
- Marinade for 20-30 minutes (no more than 30 minutes due to the acidity).
- Once it’s ready, place it on your bbq or stovetop and cook on med-high for 7-10 minutes, or until cooked through.
- Cut the chicken into strips, divide among wraps and top with your favourite [healthy] toppings!
Notes
Tequila Swap
- Not a fan of tequila or not convinced it’s kid-friendly? No problem, just replace the alcohol with more lime juice or even some pure, not from concentrate orange juice.
