Ingredients
Scale
- 1–1 1/4 cup whole grain spelt flour
- 1 tsp baking soda
- 1/4 cup raw honey or pure maple syrup
- 1/4 cup cold-pressed, extra virgin coconut oil, melted
- 1/4 cup plain, non-fat Greek yogurt
- 1 large egg
- 3 medium ripe bananas, mashed
- 1/4–1/2 cup dark chocolate chips (optional)
Instructions
- Preheat oven to 350F. Combine the dry ingredients in a large bowl. In a medium bowl, combine your wet ingredients.
- Add the wet ingredients to the dry and combine. Be sure to not overmix! Gently fold in chocolate chips.
- Spray a loaf pan with coconut oil, pour into pan and bake for 40 minutes, or until an inserted toothpick comes out clean.
Notes
How-To Make Muffins
- To make muffins, spray a muffin tin with coconut oil and divide among 12 tins. Bake for 20 minutes, or until an inserted toothpick comes out clean.
Make it Vegan
Replace the egg for a flax egg and yogurt for unsweetened apple sauce.
