Twice Baked Yam

Description

A delicious twice baked yam complimented with parmesan cheese and chives. The healthiest way to beat any craving.


Ingredients

Scale
  • 4 yams
  • 1/2 cup non-fat, plain Greek yogurt
  • 1/2 cup fresh chives, diced
  • 1/2 cup Parmesan cheese

Instructions

  1. Preheat your oven to 425F.
  2. Slice your yams in half, lengthwise.
  3. Spray a baking pan with extra virgin olive oil and place the yams face down. Bake for 1 hour.
  4. Once slightly cooled, gently remove yam from skin, leaving approximately 1/2 inch on the bottom.
  5. Mix the yam, yogurt, chives and parmesan cheese. Divide back into the yam skins.
  6. Place bake in the oven and bake for another 5-10 minutes.
  7. Top with a little extra yogurt and chives.

You can prepare this recipe ahead and re-heat before serving.
