Eat Your Greens Flatbread with Tahini Dressing

Description

A simple 4-ingredient flatbread topped with fresh ingredients and a deliciously, creamy sauce – making your new favourite Summer meal!


Ingredients

For the Flatbread

  • 1 cup whole-grain spelt flour
  • 1 cup water
  • 1 teaspoon baking powder
  • Pinch of sea salt

For the Tahini Dressing

  • 1/4 cup tahini
  • Juice from 1 lemon
  • 1 garlic clove, minced
  • 1 teaspoon pure maple syrup
  • Pinch sea salt
  • Optional: Water to thin in out (2-4 tablespoons)

For the Toppings

  • Avocado
  • Lettuce
  • Alfalfa sprouts

Instructions

To Make the Flatbread

  1. Add a little oil to an 8-inch cast iron pan and slowly heat it up.
  2. In a medium bowl, mix together the flour, water, baking powder and sea salt.
  3. Add 1/2 cup mixture into the hot cast iron and spread evenly until you have a thin layer, no more than 1/2 inch thick.
  4. Cook on medium heat until it is almost all the way cooked through and has bubbled, approximately 3-4 minutes. Flip and cook another 1-2 minutes until it has browned.
  5. Repeat until you have finished the mixture, approximately 4 flatbreads.

To Make the Tahini Dressing

  1. In a small bowl whisk together the tahini, lemon juice, garlic, syrup, and sea salt.
  2. Add water, if necessary, to thin it out. 1-2 tablespoons at a time.

To Make the Dish

  1. Mash 1/4 avocado onto the flatbread.
  2. Top with chopped lettuce and alfalfa sprouts.
  3. Drizzle with 1-2 teaspoons of the dressing.

Notes

Time-Saving Tip

Make the flatbread ahead of time, or buy store-bought whole-grain flatbread.

Variation Tip

Top with any of your favourite toppings! Hummus, any vegetables, or even use the flatbread to make homemade pizzas.
