Banana + Almond Butter Oatmeal

Description

This creamy, flavourful oatmeal comes together in just 10 minutes. It’s a great source of protein, fibre, and many vitamins and minerals to help kickstart your day. You’ll be surprised at how filling and satisfying this simple breakfast is!


Ingredients

Scale
  • 1 banana
  • 2 cups unsweetened oat milk
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 to 1 1/2 cups of large flake oats
  • 2 tablespoons almond butter

 


Instructions

  1. In a medium-size pot, mash the banana.
  2. Add the milk, vanilla, and cinnamon. Whisk until combined.
  3. Cover and turn on high.
  4. Once it begins to boil, add the oats and stir. Cover and turn down to a simmer.
  5. Cook 5 minutes, or until oats are cooked and have soaked up most of the liquid.
  6. Divide among 4 bowls and top with 1/2 tablespoon of almond butter. Stir to combine. Serve warm.

Notes

Ingredient Tip:

If you don’t like bananas, skip them and add a little maple syrup to the liquid to sweeten instead.

Variation Tip:

Go nut-free by omitting the almond butter or using a seed butter instead.

Serving Tip:

Top with your favourite goodies like fresh or frozen fruit (a great way to cool it off for kids), dried fruit, trail mix, or nuts and seeds.
