Citrus Pepper Salmon Salad

Description

A simple recipe to beat cravings (and a great post-workout meal too!).

Ingredients

Scale
  • 3oz salmon fillet
  • 8 unsweetened dried cherries
  • 2 cups spinach
  • 1 lemon
  • Sea salt and pepper, to taste

Instructions

  1. Heat a small pan on medium heat and spray with extra-virgin olive oil.
  2. Place salmon skin side down on pan.Squeeze 1/4 lemon juice and a little sea salt over salmon and coat with ground pepper. After 3 minutes flip salmon.
  3. Peel off skin and squeeze 1/4 lemon juice, a little sea salt and coat
  4. with pepper. After 3 minutes flip again and cook for 1-2 more minutes, or until salmon is cooked through.
  5. Meanwhile, halve or quarter your dried cherries. Mix spinach and cherries and squeeze 1/2 lemon juice on top. Place salmon on top to serve.
