Coconut Make-Ahead Waffles

Description

These waffles are simple to make and a perfect breakfast to prep ahead. You can freeze them and pop them in the toaster for a quick and healthy morning breakfast throughout the week. They’re also wheat, egg, dairy, and oil-free.


Ingredients

Scale
  • 1 cup spelt flour
  • 1 tablespoon coconut sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Pinch sea salt
  • 1 cup coconut milk (from the can)
  • 1 teaspoon pure vanilla extract
  • 1/2 tablespoon apple cider vinegar (with the mother)

Instructions

  1. Spray your waffle maker with coconut oil and turn to medium-high.
  2. In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. Add the milk and vanilla and mix together with a spatula.
  4. Add the apple cider vinegar and stir to combine.
  5. Use 1/3 cup to scoop the mixture into your waffle maker and close the lid. Let cook for 1-2 minutes, or until the desired colour and texture.

Notes

Storage Tips

Place the waffles in a single layer on a cookie sheet in the freezer. Freeze for 30 to 60 minutes. Remove from freezer and place in a freezer-friendly reusable ziploc bag and place back in the freezer. Reheat in the toaster.

Variation Tips

Customize your waffles by adding chopped apples or nuts, berries, or mashed bananas.

Serving Tips

Top with your favourite nut butter, chia jam, coconut yogurt, coconut whip, or pure maple syrup.
